St. Valentine's Day Cupcakes





Happy  St.Valentine's Day! Today I am going to make St. Valentine's Day cupcakes. I used Duncan Hines Marble Fudge cake mix.


The box comes with two packets. One contains the packet of the fudge mixture and the other contains yellow cake mix.





First, pour the yellow cake mix into a large bowl and add the wet ingredients listed on the back of the box. Then, pour a cup of yellow cake mix into a smaller bowl and add the packet of the fudge mixture.





To make these cupcakes I  used a Wilton Valentine's Day cupcake kit I found at Walmart. It is really strange, but I can't find it online anymore. Anyway, you will also need one pipping bag, red food coloring, hot pink sprinkles, Wilton decorating tip 1M, and a box of Wilton buttercream icing mix. I lined my cupcake pans using the cupcake liners provided in the kit.





After I have lined the pans, I first poured the yellow batter into all of the cupcake liners. Then, I added a dollop of the chocolate fudge mixture and swirled it in




Bake them in the oven at 350 degrees for 20-25 minutes. Let them cool in the pan for 5 minutes before taking them out. Meanwhile, follow the instructions on the back of the buttercream mix. It says 6 tbsp. of butter, but I do the normal 1 cup and that turns out a whole lot better. Using red food coloring, I dyed my icing the desired shade of pink.


Using tip 1M, fill the piping bag with the pink buttercream. Pipe out the traditional cupcake swirl. You can find a video tutorial here.


Next, sprinkle on the hot pink sprinkles.



Add the cupcake topper.


Then repeat the process 24 times. For the display, I used the white plate I used in this post.

Today I made triple chip cookies - white chocolate, dark chocolate and milk chocolate chips. First, preheat your oven to 375 F. The list of ingredients are: 2 1/4 cup flour 1 tsp. Chocolate Donuts

With the two doughnut pans I received for Christmas for a relative, I made chocolate donuts using this recipe  here . The ingredients are flour, cocoa, baking soda, salt, melted butter, eggs, white sugar, brown sugar, buttermilk, or regular milk mixed with vinegar.The recipe she gives only makes about 6 doughnuts, so I had to double my recipe. First, preheat your oven to 350. Grease your doughnut pans. In a small bowl, mix together the flour, baking soda, cocoa, and salt. In a larger bowl, mix together the wet ingredients. Then, mix the wet and dry together. Then fill your pans with the batter. I tried using the piping bag technique, but I didn't use a piping tip and I cut the hole too big, so that didn't turn out well that time. But, if you don't cut your hole too big, the piping bag technique is probably the easiest to do. Bake them in the oven for 8-10 minutes.Let them cool in the pans for 2-3 minutes, then try to take them out. You want...

Snickerdoodles

Since Fall is here, I thought I would post a fall themed recipe. So I usually use the recipe I have in my Betty Crocker cookbook, but today I wanted to try something different. I went online and found this recipe from Cookies and Cups, so check out her blog. I think I will probably use the Betty Crocker recipe, so I will tell you more about that at the end of this post. As usual when creaming butter and sugar, you really want to make sure you do it well. I think I creamed mine for at least 3 minutes. More time, such as 5 minutes, would be even better. Once the butter is all creamed together with the sugars, you are going to add your egg and egg yolk one at a  time.   Before we mix the eggs, we are going to add our baking soda, cream of tartar, salt, cinnamon, and vanilla. I didn't include the clip of me adding the baking soda because I didn't want you to get it confused with the cream of tartar, but don't worry, I added it. So once all of that is is ...
