Winter Cupcakes




Happy New Year! I made some chocolate cupcakes and used a snowflake topper and winter sprinkles I got at Michaels. I used Duncan Hines chocolate cake mix and used Duncan Hines whipped vanilla icing and whipped chocolate icing.



 So first, follow the instructions on the back of the cake box. I added another egg and used milk instead of water to make the cupcakes richer and denser. Bake it in the oven according to the back of the box. I used one box, which typically makes 24 cupcakes.





To decorate the cupcakes you will need a can of Duncan Hines whipped chocolate icing, a can of Duncan Hines whipped vanilla icing, 1-2 piping bags, a large star decorating tip, snowflake treat toppers, and Wilton's winter sprinkle mix. You will also need a large circle cake board ( I think I used either a 10 inch or a 12 inch) and a wine glass for the display I used.




First, using the large star tip, fill a piping bag with white icing. The reason why I said you might need two piping bags, is if you have two large star tips, and you don't want a little bit of white icing in your chocolate icing. Ice the cupcakes by piping the cupcake swirl. There are about six types of sprinkles in the container, but my favorites to use are the snowflakes, the little straight ones, and the white and blue circles. Once the icing and sprinkles are on, stick a treat topper into the cupcake. They look beautiful! Once you have run out of  white icing you can either use the same piping bag, or use a different one to follow the same steps, but with chocolate icing. In the middle of my cake board, I stuck the wine glass upside down and put a cupcake on top, and cupcakes around the bottom.



I ended up using the fancier white plate that is in the picture, because I made these when friends came over. I displayed the chocolate iced cupcakes on the white plate, and the white iced cupcakes on a turquoise square plate I used here . There were more cupcakes on the plate than in this picture because I forgot to take the picture the day I made them, so this picture was taken the day after.
These cupcakes are so simple and easy to make and they look and taste delicious. Enjoy!

Blue and White Swirl Cake

So here it is....my first real cake decorating video and post! I made chocolate cake, filled with chocolate icing, and covered in blue and white flowers and stars. This cake looks a little hard to make, but in reality is very easy ! To start out, I baked two nine inch chocolate cakes, let them cool, and leveled them using my cake leveler. Snickerdoodles

Since Fall is here, I thought I would post a fall themed recipe. So I usually use the recipe I have in my Betty Crocker cookbook, but today I wanted to try something different. I went online and found this recipe from Cookies and Cups, so check out her blog. I think I will probably use the Betty Crocker recipe, so I will tell you more about that at the end of this post. As usual when creaming butter and sugar, you really want to make sure you do it well. I think I creamed mine for at least 3 minutes. More time, such as 5 minutes, would be even better. Once the butter is all creamed together with the sugars, you are going to add your egg and egg yolk one at a  time.   Before we mix the eggs, we are going to add our baking soda, cream of tartar, salt, cinnamon, and vanilla. I didn't include the clip of me adding the baking soda because I didn't want you to get it confused with the cream of tartar, but don't worry, I added it. So once all of that is is ...
