Chocolate Cupcakes

  



     Recently I made chocolate cupcakes and decorated them with pink and blue icing and sprinkles. I used Duncan Hines Dark Chocolate Fudge boxed cake mix.



All you need is 3 eggs, 1/3 cup of vegetable oil, and 1 cup of water.



Preheat your oven to 350 degrees. I usually do this before I start mixing the ingredients together so that when I am done mixing the ingredients so when I am ready to bake the batter, I can just put it right in the oven. So, first pour the dry mix into your bowl for your stand mixer, or just into a regular bowl or mixing bowl, if you have a hand mixer. I have a hand mixer, so I use regular bowls. Here is the one that I used.


So after you have poured your dry mix into your bowl, add the eggs, oil, and water. If you want your cake to be richer and heavier, use milk instead of water and add an extra egg. You can follow the instructions on the box (which I sometimes do) but sometimes I just beat it until it looks something like this.



I made 12 cupcakes. I use an ice-cream scooper so that the cupcakes can be even.


So, if you have one, use the ice-cream scooper to scoop the batter into the cupcake liners. If you don't have one, just use a spoon to scoop it into the liners.


Bake it in the oven for 23 minutes. I had extra batter, so I put it into 9 inch round cake pan.


When it is done baking let it cool for about 5 minutes, then take the cupcakes out of the pan, and onto a cooling rack.


 I used Betty Crocker cupcake icing.

 I tried out some of the tips and found one that I liked, and then iced the cupcakes like this.


I arranged the cupcakes on a cake board, and then stuck a wine glass upside down, and set the cupcake on the foot thing on the wine glass.


On top of the blue iced cupcakes, I added silver sprinkles, and on the pink, I used hot pint sprinkles.

Baking things like this are easy and fun! I love little decorating things like this. Try it using different Icing Colors and see what you can create!

Blue and White Swirl Cake

So here it is....my first real cake decorating video and post! I made chocolate cake, filled with chocolate icing, and covered in blue and white flowers and stars. This cake looks a little hard to make, but in reality is very easy ! To start out, I baked two nine inch chocolate cakes, let them cool, and leveled them using my cake leveler. Snickerdoodles

Since Fall is here, I thought I would post a fall themed recipe. So I usually use the recipe I have in my Betty Crocker cookbook, but today I wanted to try something different. I went online and found this recipe from Cookies and Cups, so check out her blog. I think I will probably use the Betty Crocker recipe, so I will tell you more about that at the end of this post. As usual when creaming butter and sugar, you really want to make sure you do it well. I think I creamed mine for at least 3 minutes. More time, such as 5 minutes, would be even better. Once the butter is all creamed together with the sugars, you are going to add your egg and egg yolk one at a  time.   Before we mix the eggs, we are going to add our baking soda, cream of tartar, salt, cinnamon, and vanilla.
