St. Nicholas Day Cupcakes










I know these cupcakes don't look much like Christmas cupcakes, but they were good! I used Duncan Hines Devil's Food chocolate cake mix.




Preheat your oven to 350. Then mix 3 eggs a cup of milk or water and 1/3 cup of vegetable oil.







Then mix it together. These are some cool shots my brother took of it mixing.






Then scoop the batter into your muffin tins. The box says it will make 24 cupcakes, but I usually end up with only 18 or so. Bake them for 20-22 minutes. Cupcakes cool fast so let them sit out for 5-10 minutes, or put them in the freezer for 2-3 minutes.



To ice them, I used Betty Crocker's Cupcake Icing. I used the same kind I used here . I played around with the tips and iced them using the chocolate flavor and the pink colored kind. I sprinkled red sprinkles on them too.










These could also be used as Valentines Day cupcakes too!! More Christmas posts coming soon!

Blue and White Swirl Cake

So here it is....my first real cake decorating video and post! I made chocolate cake, filled with chocolate icing, and covered in blue and white flowers and stars. This cake looks a little hard to make, but in reality is very easy ! To start out, I baked two nine inch chocolate cakes, let them cool, and leveled them using my cake leveler. Snickerdoodles

Since Fall is here, I thought I would post a fall themed recipe. So I usually use the recipe I have in my Betty Crocker cookbook, but today I wanted to try something different. I went online and found this recipe from Cookies and Cups, so check out her blog. I think I will probably use the Betty Crocker recipe, so I will tell you more about that at the end of this post. As usual when creaming butter and sugar, you really want to make sure you do it well. I think I creamed mine for at least 3 minutes. More time, such as 5 minutes, would be even better. Once the butter is all creamed together with the sugars, you are going to add your egg and egg yolk one at a  time.   Before we mix the eggs, we are going to add our baking soda, cream of tartar, salt, cinnamon, and vanilla.
