Pumpkin Pie!

                                                                                                    Making a Pumpkin Pie!      Since it is now fall, I decided to make a pumpkin pie. I tried using the Libby's Pumpkin Pie Mix.  For the pie crust, I used Kebbler's Ready Graham Pie Crust. I am making two pies so I needed two pie crusts and two cans of the pumpkin pie mix. For one pie, you need to add 2/3 cup of evaporated milk and two eggs. Since I used two cans of pie mix,  I needed 4 eggs, and one 12 oz. can of evaporated milk. If you are making one pie, use a 5 oz. can of evaporated milk.   I preheated my oven to 425 degrees then I poured the two cans of pumpkin pie mix into a bowl, and added the eggs and milk.  I only had a smaller bowl that was clean so I had to mix it by hand, but if you have a larger bowl, you can use a mixer. Chocolate Cupcakes

        Recently I made chocolate cupcakes and decorated them with pink and blue icing and sprinkles. I used Duncan Hines Dark Chocolate Fudge boxed cake mix. All you need is 3 eggs, 1/3 cup of vegetable oil, and 1 cup of water. Preheat your oven to 350 degrees. I usually do this before I start mixing the ingredients together so that when I am done mixing the ingredients so when I am ready to bake the batter, I can just put it right in the oven. So, first pour the dry mix into your bowl for your stand mixer, or just into a regular bowl or mixing bowl, if you have a hand mixer. I have a hand mixer, so I use regular bowls. Here is the one that I used. So after you have poured your dry mix into your bowl, add the eggs, oil, and water. If you want your cake to be richer and heavier, use milk instead of water and add an extra egg. You can follow the instructions on the box (which I sometimes do) but sometimes I just beat it until it looks something like this.

Chocolate Cupcakes

   Chocolate cupcakes so yummy, especially if you want chocolate cake in small snake sized portions. To start, you are going to need a box of chocolate cake mix. I used Duncan Hines Dark Chocolate Fudge. So I used 1/3 cup vegetable oil, three eggs, and one cup of water. This is before I found out one of my cake mix hacks which is replacing water with milk and using four eggs instead of three. This makes the cake more moist. Preheat your oven to 350 degrees. I do this before I start mixing the ingredients together so that when I am done mixing the ingredients,  I can put it right in the oven.  So follow the instructions on the back of the cake mix you are using. Combine all of the ingredients using a mixer. I do not have a stand mixer, so I used one of my large mixing bowls and a hand mixer.                                                   My batter is all ready to bake!! I made 12 cupcakes. I used an ice-cream scoop to distribute my batter evenly.
